The lung of Baga Biga Faktoria is the area where we brew beer, here we respect the traditional brewing method and consumption km0, where we hardly generate waste and guarantee the maximum freshness of the product.
From the glass you will be able to see us making your favorite drink, so you are invited to see the making process in the very center of Donostia.
KM0 PHILOSOPHY
THE PROCESS
The entire production process is carried out in the same place, from the grinding of the grain to the output of the beer at the tap, respecting the necessary fermentation and maturation times.

ELABORATION
The trick to making a good craft beer is to choose the best raw materials on the market. To get the best performance from them, we work scrupulously following the traditional production method.

FERMENTATION
This is where the magic is created, the transformation of a barley wort into beer. In this phase of preparation it is very important to control the temperature so that the yeast can reproduce naturally.

MADURATION
Once the beer is the beer and its conditions are optimal, we spend it in refrigerated tanks, thus maintaining maximum freshness and guaranteeing the highest quality.

STRAIGHT TO THE TAP
And finally, we transfer the beer from the storage tanks to the taps in a refrigerated manner and in perfect conditions to enjoy it.

THE INGREDIENTS
Although beer endures everything, the main ingredients are only four: Water, malt, hops and yeast.
MALT
Malt is a grain that has been germinated and dried, usually barley, wheat, rye, and oats. We can play with many different types depending on their drying, so unique beers are achieved.
HOP
Hops are a climbing plant, whose flowers are a kind of buds, these are dried to be used during cooking, providing aroma, flavor and bitterness to our beer.
YEAST
Without yeast there is no beer, it is the essential part, the one that transforms a sweet must into a rich and refreshing beer, there are thousands of different varieties.
WATER
The great forgotten but the most important, without water it is impossible to make beer; and its characteristics have to be specific: correct PH, suitable minerals and little chlorine.

The big difference between craft and industrial beer is not only in the quality raw material used, but also in the care with which it is made.
It is fortunate to be able to carry out the entire process in the same space in an artisanal way, from the grinding of the grain to the tap; eliminating packaging and intermediate steps and reducing waste.

BARE-BARE
It is a Golden Ale, blond and with white foam. It is very refreshing and easy to drink, it has a citrus aroma and a medium bitterness.
GREEN JUNGLE
IPA style beer, with double dry hopping so it is very aromatic. It has notes of tropical fruits and fresh grass, and its bitterness, although high, is not astringent at all.
RUSSIAN RED
It is a reddish Red Ale with a dense white foam. It is great if you are a lover of malty beers, it has sweet touches and a very soft bitterness.
EKLIPSE
It’s a double IPA beer. Its main characteristics are: bitterness and aroma. It is made with the best American hops.
GLURIK
Gluten free Hoppy Helles style beer. It is golden in color, fresh and with a touch of bitterness that will not leave you indifferent.
BLAT
This Weissbier is a wheat beer brewed in the traditional style. It is blond, slightly cloudy, with banana aromas and easy to drink.
MANGO MANGO
This Sour is our most tropical beer where the mango stands out softening the natural acidity of the style.

The most fun thing about this profession is the freedom to create your own recipes, striving for batch after batch perfection. It is a true pleasure to make a product and to be able to see people try it, see their faces, hear their comments… this helps you a lot to improve, to be ambitious, but above all, it fills you with pride when what you have just created like.
